Ingredients:
  • Maida (plain flour) – 2 cups
  • Salt – 1/4th cup
  • Baking soda – 1/4th cup
  • Oil – for deep fry
  • Crushed Pista – for garnish

Ingredients:
  • FOR SUGAR SYRUP:
  • Dalda – 4 tbsp, melted (or melted butter)
  • Water – 1 cup
  • Sugar – 2 cups
  • Patika – 1/2 tbsp, (patika replacement lemon juice)

Preparation Steps:
  • Take 2 Cups of Maida or Plain Flour into a mixing bowl and add 1/4th TBSP of Salt, 1/4th TBSP of Baking Soda, and 4 TBSP of Melted Dalda or Butter into it and Crumble and Mix all well.
  • Now add 1/2 Cup of water to it and mix well. Knead the dough for at least 5 minutes, it will become a soft and smooth dough.
  • Cover the dough with a wet cloth and keep it aside for 20 Minutes.
  • For preparing the sugar syrup, take 2 Cups of Sugar into the Pan and add 1 Cup of water and stir it well, add 1/2 Inch of Patika it helps in sugar not to crystalize. Instead of Patika, we can use 1 TBSP of Lemon Juice as well.
  • Mix all well till the sugar melts completely and after 3 minutes we can see the bubbles in the boiling sugar syrup.
  • Consistency of the sugar syrup should be not the string consistency. Overall in 4 minutes the syrup will be ready, switch off the flame and take it out.
  • Now divide the rested dough into lemon sized balls and keep it aside.
  • Now take the ball sized dough and make it round, keep it in the palm hand and press it in the center with the thumb finger and make a small dent at the center. Keep it in mind that do not make a complete hole in the dough.
  • Medium heat the oil a large vessel/pan and put the prepared Badusha into it and leave it like that. Don’t mix or turn upside down immediately after putting it into the oil.
  • After 2 Minutes the Badshah will float to the top, now turn all the Badshah’s upside to down and fry till the Badushah’s turns into golden color.
  • Take out the Badushah’s from oil and keep it into the prepares sugar syrup, and stir well for at least 3 minutes and take it out.
  • Garnish the Balushahi’s with crushed garnish and ready to serve.
