This recipe is used mainly used “Festival Recipe“. Follow the below procedure steps and ingredients for tasty and traditional “Chalimidi Recipe“.

  • Rice – 2 cups
  • Chopped Coconut – 1/2 cup
  • Cashew – 4 tbsp
  • Jaggery – 1/4th cup
  • Sugar – 1/4th cup
  • Water – 1/4th cup
  • Poppy Seeds – 2 tbsp
  • Cardamom Powder – 1 tbsp
  • Ghee – 1/4th cup

Preparation Steps:
  • For preparing the rice flour, take 2 Cups of Rice, wash it and soak it for a minimum of 5 Hours.
  • After 5 hours drain the water from the rice, and dry it (pat dry) on a clean cloth. If any moisture is there trying to rub it with a cloth and try to remove the moisture from the soaked rice.
  • Now blend the rice in a mixer grinder and make a fine powder. Sieve the powder twice this process is necessary to find the lumps in the powder.
  • Press the flour tightly to avoid extra dryness in the powder and keep it aside.
  • In a frying pan take 4TBSP of cow ghee, and take the 1/2 cup of chopped fresh coconut. Fry it up to 60% now add 4 tbsp of cashews and fry till golden brown color and keep it aside.
  • Now the important step is preparing the jaggery syrup, for this in the same pan take jaggery 1/4th cup, 1/4th cup of sugar, and 1/4th cup of water in it and stir continuously till the jaggery melts completely.
  • Stir continuously for two to three mins and check the syrup consistency by taking the small quantity and put in the water and observe the syrup it will form a shaper (like jelly). Please note that syrup should not be hard.
  • Now add the small quantity of rice flour into the syrup and stir continuously. make sure that there are no lumps are present in the syrup. and again, pour the small quantity of rice flour and stir it well. make sure that no lumps are present.
  • Don’t overcook the flour in the syrup it will harden the dough.
  • Now switch off the flame and add the fried coconut pieces, cashews, and 1TBSP of cardamom powder, 2TBSP of poppy seeds, and 4TBSP of cow ghee to it and mix and combine well.
  • That’s it the Tasty Chalimidi is ready to serve.
